By the Way Bakery began in May of 2010, when Helene gave up a 22-year career as a workaholic intellectual property and media attorney. One year later, with no formal training but plenty of moxie, she opened a small bakery in her hometown of Hastings on Hudson.
Helene now oversees four retail shops. (In addition to the By the Way Bakery in Hastings, there are two New York City locations – one on the Upper West Side and one across town on the Upper East Side – and one in Greenwich, Connecticut.)
The company also has a fast-growing wholesale business. By the Way products are available in 100 Whole Foods from Northern New Jersey to Maine, and numerous other retail markets.
She has more than 85 employees, including a team of 40 bakers who bake in a 16,000-square-foot state-of-the-art commissary in Pleasantville.
